Huabal is a district within the Jaén province of Cajamarca.Altitudes in the area range from 1200 to 2100masl, but most of the producers are above 1800masl.Huabal is made up of various villages, which are centres of coffee production and each producer belongs to a village. Since Huabal spans a couple of mountains, the climate conditions and soils can vary considerably, with some areas having wet, humid conditions and red, African-like soils and others dry and hot.
This all contributes to diverse and delicious cup profiles and some very complex coffees.Yoner Celis Guerrero owns the small parcel high in the district of Huabal at 1700masl where she has the varietals caturra, pache and nacional.While Pache and Caturra are two very common varietals, Nacional is a varietal that is scarce in this region of Peru and would be known as typica elsewhere. This year produced in total 20 bags of exportable green coffee. On the farm the coffee is fermented in concrete tanks overnight for 12 – 18 hours depending on the weather. After this, the coffee is then washed and cleaned before being dried on plastic tarpaulin in the sun for 10 – 14 days. From here the coffee is stored at the farm and then taken to the Falcon warehouse in Jaen.
